※ Smoked Hock & Cauliflower Soup

I love this meal as it is prep time of no more than 5 minutes and only using 1 pot so no dishes! Great lazy winters day food.
INGREDIENTS
- small ham hock
- 1/2 head of cauliflower
- 1 large carrot
- 1 large onion
- 1 potato
- 1 cup of brown rice
- 2 shallots
- 2 cloves of garlic crushed
- 600ml of stock (I used vegetable this time)
- 400ml Water
METHOD
Chop all of the vegetables roughly
Add stock hock, rice & water
Simmer on low heat for 3 hours in a heavy bottomed pan (alternately 8 hours in a slow cooker on low)
Remove hock and pick apart meat from bone
Use a vegetable masher to roughly break apart vegetables (you can put in blender but is nicer chunky)
I was looking for a soup that takes a ham hock and cauliflower but does not require milk .. with grated cheddar cheese added at the end -- and this came up. What I like about this recipe is that milk is not needed. I will use my instant pot instead of cooking for a few hours. When it's ready and cooled I would probably process the carrot and potato, doing the potato first with some of the soup, and when that is smooth adding chunks of carrot and processing until the chunks are small. I think I would then add small florets and simmer until they were ready, add bits of ham from the ham hock, and before serving add some grated cheese. I might skip the rice and increase the amount of potato. I am going to try my amended version of this recipe -- so thank you very much for posting it.
