※ Oat, coconut and chocolate bars

INGREDIENTS
  • 1 cup self raising flour
  • 1/2 teaspoon salt
  • 1/3 cup butter
  • 1 cup packed brown sugar
  • 1/2 teaspoon vanilla extract
  • 2 eggs
  • 1/4 cup semisweet chocolate chips*
  • 2 tablespoons oats (extra for sprinkling on top also)
  • 1/4 cup shredded coconut
  • 1/4 cup raisins or sultanas
  • 1 teaspoon cinnamon sugar

METHOD
  • Preheat oven to 175 degrees C.
  • Grease a 9x13 inch baking pan.
  • In large bowl, cream the shortening, brown sugar, eggs and vanilla extract.
  • Slowly blend in flour, baking powder, and salt.
  • Mix until well blended.
  • Fold in chocolate chips, oats, raisins and coconut.
  • Spread the mixture evenly in pan.
  • Dust surface with cinnamon sugar.
  • Sprinkle with extra oats if so desired.
  • Bake 20 to 25 minutes.
  • Let cool before cutting into bars.

*i used milk chocolate and strawberry chocolate (from essential ingredient) you could use any combo you like, possibly even add nuts.
